Chicken Chowder

This is what we had for dinner tonight! Along with homemade rolls! Yum, it hit the spot!

Chicken Chowder

4-5 chicken breasts cooked and shredded (set aside)

1 c. chopped onion
1 c. chopped celery
2 c. cubed potatoes
1 c. slice carrots
Simmer in 4 c. chicken broth, until veggies are tender

While veggies are simmering, cook roux:

3/4 c. butter
2/3 c. flour
1/2 tsp sugar
1 tsp. salt
1/4 tsp. pepper

Then add:
1 quart milk
Cook on medium heat until it forms a sauce, stirring.

Add canned or frozen corn (1 c. or more) to pot of veggies; add chicken and roux and let simmer on medium heat another 5 minutes or so. Serves 6-8 people. Freezes well.

**I boiled a whole chicken and that worked well! If you get them at a good price it's quite a bit cheaper than just using breasts too.
